Ingredients
Cooking oil spray

leeks
thinly sliced

bottled garlic

lean ground sirloin beef

red curry paste

Tomato sauce

light coconut milk

brown sugar
1/4
tsp
lime rind
grated

lime juice

tbsp
Asian fish sauce
Cilantro
Chopped
green onions

Instructions
Spray a skillet with cooking oil and sauté the leek for five minutes.
Add the garlic and fry for another minute.
Add the beef and sauté for seven to eight minutes until it browns.
Mix in the curry paste and tomato sauce and allow the curry to boil until it reduces to half.
Pour in the coconut milk, brown sugar, lime rind and Asian fish sauce and stir well.
Cook for two minutes, and remove from the stove.
Garnish with cilantro and green onions.
