Skewer-ing Good
These chicken skewers make the perfect appetiser!
Ingredients

skinless
boneless chicken breasts cut into cubes
wooden skewers
For the marinade
1/4
cup
soy sauce

sugar

lime juice

Oil

curry powder

garlic cloves

Ginger
minced

tsp
Cardamom
For the peanut coconut sauce
13.5
ounces
coconut milk
1/4
cup
peanut butter
1/4
cup
dark brown sugar

tbsp
soy sauce
1 1/2
tsp
red curry paste
Instructions
Soak the skewers in ice cold water.
Whisk the ingredients for the marinade together and pour it over the chicken.
Knead the marinade into the chicken.
Cover the chicken and marinade overnight.
Coat a grill rack with non-stick cooking spray.
Skewer the cubes onto the skewers (6-8 on each one) and grill for eight to ten minutes.
Meanwhile, combine the ingredients for the sauce and cook it over medium heat for three minutes.
Remove the skewers from the grill and allow them to cool.
Serve the skewers with the sauce as a dip.
