Gumbo Tales
Gumbo inspired by Tiana’s cooking skills!
Ingredients

large boneless
skinless chicken breast halves
salt and pepper

cup
vegetable oil
1
pound
smoked sausages
cut into pieces
1/2
cup
all purpose flour

tbsp
margarine
1
large onion
chopped
8
cloves
garlic
minced
1
green bell pepper
seeded and chopped
3
stalks celery chopped
1/4
cup
Worcstechire sauce
4
cups
hot water
5
beef bouillon cubes
1
can stewed tomatoes
with juice
2
cups
okra
chopped
4
green onions
sliced
1/2
pound
small shrimps
peeled, deveined and cooked

tbsp
Tabasco sauce
Instructions
Toss the chicken in salt and pepper and cook it in the oil until browned on both sides.
Cook the sausage in the same oil until browned.
Add the flour to the oil and stir in 2 tablespoons of the margarine.
Continuously stir this mixture over medium high heat until brown.
Stir in the remaining margarine and add the onions, garlic, green pepper and celery.
Cook this mixture over a low flame for 10 minutes.
Stir in the Worcestshire sauce, salt and pepper.
Stir for 10 minutes and then pour in four cups of hot water.
Add the bouillon cubes and stir rapidly until they melt.
Add the chicken and sausages.
Bring the gumbo to a boil and reduce the heat.
Cover and simmer for 45 minutes.
Stir in the tomatoes and okra and cover again and simmer for another hour.
Take the gumbo off the stove and stir in the green onions, shrimp and Tabasco sauce.
