A cheesy casserole with layers of zucchini and tomato.

Ingredients

cups
½cheddar cheese
grated
1/3
cup
Parmesan cheese
grated
½
tsp
dried oregano
½
tsp
dried basil

cloves
garlic
minced

medium zucchinis
thinly sliced

plum tomatoes
thinly sliced

butter

tbsp
finely chopped onion

fine bread crumbs
salt and pepper to taste
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Lightly grease a 9”x9” baking dish.
In a large bowl, combine cheddar, Parmesan, oregano, basil, and garlic. Season with salt and pepper, and set aside.
Place half of the zucchini slices in the pan and sprinkle a quarter of the cheese and herb mixture on top.
Place half of the tomatoes, and top with another quarter of the cheese mixture. Repeat layers.
Heat a skillet over medium heat and melt the butter in it. Stir in onions, and cook until soft and translucent.
Stir in breadcrumbs and cook until they have absorbed the butter.
Sprinkle on top of casserole.
Cover loosely with foil, and bake in the preheated oven for 25 minutes.
Remove foil, and bake until the top is crusty and the vegetables are tender, about 20 minutes.
Serve.
