Let’s get Tropical
Nothing says tropical like mango and pineapple. The honey-lime dressing is fresh and will make you go bananas over it.

Ingredients

fresh pineapple

pint
strawberries
sliced

bananas
sliced
2
kiwis
peeled and sliced
1
mango
sliced
2
champagne mangoes
sliced
½
cup
red grapes
1

star-fruit
cut⅛” slices
⅓
cup
honey
2
limes
juiced
½
teaspoon
cinnamon
¼
cup
coconut flakes

fresh mint

Instructions
Cut pineapple in half lengthwise.
Carve out the insides from pineapple halves.
Save halves to serve salad in.
Dice pineapple, discarding the core.
Mix pineapple, strawberries, bananas, kiwis, grapes, mangoes and half the star-fruit together.
In a small bowl, combine honey, lime juice and cinnamon.
Pour over fruit and toss.
Place in pineapple shell, sprinkle with coconut and garnish with mint leaves and additional star-fruit slices.
