A Little Lamb?
Ingredients

leg of lamb
1/4
cup
fresh lemon juice
8
cloves
garlic
minced

tbsp
rosemary leaves
chopped

Salt

tsp
black pepper
For the sauce
1
cup
fresh herbs
chopped
2
cups
onions
diced
2
cups
chicken stock
1
cup
red wine
Instructions
Preheat an oven to 400 degrees F.
Rub the lamb with the lemon juice and then cover it with the garlic and rosemary.
Season with salt and pepper and roast for 30 minutes.
Reduce the oven temperature to 350 degrees F and cook for another hour.
Take the lamb out and allow it to rest for 15 minutes.
In the meantime, combine the pan drippings with the herbs and onions for the sauce.
Pour in the chicken stock and wine and stir well until the sauce reduces.
Carve the lamb and serve with the sauce drizzled over it.
