Ingredients
For the cupcakes

For the icing

cream cheese

Instructions
Grease the cupcake moulds with a little butter.
Preheat the oven at 170C and meanwhile make the cupcake batter.
For the batter, put the mangoes in a blender and make a puree.
Beat eggs, caster sugar, vegetable oil, vanilla extract, lemon zest and mango puree in a mixing bowl.
Add flour, baking powder and salt, mixing it in well.
Fill the cupcake moulds more than halfway with the batter.
Bake the cupcakes for about 20 minutes or till the toothpick comes out clean.
Make the frosting by beating the cheese and butter till you get a smooth mixture.
Now add some vanilla extract and icing sugar and beat that in as well.
Pipe the frosting onto completely cooled cupcakes and decorate with small pieces of fresh mango.
