Ulundu Vadai Recipe
Ulundu Vadai, also known as Medhu Vadai, is a South Indian snack that’s doughnut shaped and filled with spices.
Ingredients
WHOLE URAD DAL – 1 AND 1/4 CUP
GREEN CHILLI – 3-4 NOS
Salt + as needed
ASAFOETIDA – 1/4 TSP
Curry leaves- few
CORIANDER LEAVES – FEW
Ginger – a small piece
OPTIONAL
SHALLOTS 10-12 NOS
WATER – APPROX 1/4 CUP
TO GRIND
oil for frying
Instructions
Soak the urad dal and green chillies for an hour.
Drain the water and grind along with asafoetida, curry leaves, coriander leaves, and ginger.
Peel the shallots and pulse them in a mixer and add to the ground mix.
Add salt to the batter before making the vadas.
Take a ball of batter (that should fit in your palm) and flatten it over a plastic sheet. Poke a hole through the centre.
Heat oil in a pan till oil splutters and add the vadais, flipping after 2 minutes, and frying until golden brown.
Drain using paper towels and repeat the same process until batter is done.
