Curry me Lentil
One of the easiest curries you’ll whip up. Simple, flavourful and spicy!
Ingredients

lentils
cooked and drained

cup
Basmati rice
cooked
2
cloves
of garlic
chopped fine
½ onion
chopped fine

tablespoon
extra virgin olive oil
16
ounces
Tomato sauce
cup
⅔coconut milk
teaspoon
½garlic powder
teaspoon
½ground ginger
teaspoon
½turmeric
1
teaspoon
garam masala
2
teaspoons
Curry
Cilantro for garnish
Instructions
Heat olive oil in a frying pan.
Add the garlic and the onion and cook until golden brown and fragrant.
Add the tomato sauce, coconut milk and spices and cook for about 5 minutes. Stir well.
Add cooked lentils, stir and cook for 15 minutes- over medium heat.
Serve the lentils over the basmati rice.
Add cilantro for garnish.
