Tasty Stew
Simmer up some vegetables to make this tasty Kerala stew!
Ingredients

carrots
peeled and chopped

potatoes
peeled and chopped
cup
¾peas

gms French beans

onion
thinly sliced

garlic cloves
crushed

Ginger
julienned

Green chilies
slit

inch
½cinnamon

Cloves

tsp
black pepper

green cardamoms

cups
½thin coconut water

cup
thick coconut milk

Curry Leaves

tbsp
coconut oil
salt as required
Instructions
Heat the coconut oil and fry the whole and crushed spices.
Sauté until fragrant.
Add the garlic, green chillies, ginger, curry leaves and sliced onions and fry until the onions become translucent.
Stir in the chopped vegetables and sauté for a minute.
Ass the coconut water and cover the pan for two minutes to allow the vegetables to cook.
Stir in the coconut milk and simmer for half a minute.
Serve!
