Cool As a Cucumber
Cool down with this quick cucumber kichadi recipe!
Ingredients

cucumber
peeled, seeded and chopped into cubes
cup
¾yogurt
Salt + as needed
To grind
1/3
cup
Grated coconut
2
Green chilies
tsp
¼mustard seed
2
pearl onions
chopped
For seasoning
2
tsp
coconut oil
1/3
tsp
Mustard seeds
2
Red chilies

Instructions
Grind the ‘to grind’ ingredients into a smooth paste.
In a pot, cook the cucumber in a little salt seasoned water until soft.
Then, stir in the paste, and cook on a low flame for three minutes.
Remove the cucumber from the flame and allow it to cool.
Once cooled, stir in the curd.
Then, heat the coconut oil and fry the mustard seeds red chilies and curry leaves.
Saute for a minute.
Remove from pan and pour over the cucumber.
Serve!
