Spaghetti and Meatballs Recipe

Ingredients

extra virgin olive oil

For the meatballs

For the spaghetti
1 1/2
pounds
spaghetti
Instructions
To make the sauce
Sauté the onions and garlic in the olive oil for 1-2 minutes.
Add the carrots and mushrooms and sauté for 2 minutes.
Add the tomatoes, basil and parsley.
Mash the tomatoes until the sauce starts to thicken.
Add the tomato paste concentrate and reduce heat to simmer.
Allow to simmer, stirring occasionally.
To make the meatballs
Mix together the beef, Italian sausage, basil, parsley, mushrooms, eggs, breadcrumbs, cheese, herbed salt and pepper.
Form 1 inch round meat balls.
Heat the olive oil and sauté the meat balls on each side for 2-3 minutes.
As the meat balls are browning add a little red wine.
Then, add the wine, cheese, salt and meatballs to the sauce.
Simmer for 45 minutes stirring occasionally.
While the sauce is simmering cook the spaghetti according to directions.
Drain the spaghetti and place on a plate.
Pour the sauce over the spaghetti
Sprinkle with a little Parmesan cheese and serve.
