Go Healthy, Thai Style!
This simple Thai salad is perfect for those lazy winter days!
Ingredients

large skinless chicken breasts

g
egg noodles

handfuls of Chinese leaves
shredded
2
carrots
thinly sliced
8
Spring onions
finely sliced
1
red pepper
seeded and finely sliced
1
handful of fresh coriander leaves
For the dressing
1
red chili
seeded and chopped
2
garlic cloves
finely chopped
1
tbsp
root ginger
finely chopped
2
tbsp
soy sauce
1
lime
juiced
2
tbsp
olive oil
2
tbsp
Water
Instructions
Preheat a grill to high and then grill the chicken for 10 minutes until cooked.
Cook the noodles and drain.
Toss the vegetables together and slice the chicken and toss it with the vegetables.
Add the noodles and coriander leaves and toss again.
Whisk the dressing ingredients together and pour it over the salad.
Toss to combine and serve!
