Ingredients

of white chocolate

of soft cheese

of double cream

of caster sugar

of raspberry jam

Instructions
In a glass bowl, add the chocolate pieces
Place the bowl over a pan of simmering water and whisk until it melts
Line a loaf tin with some cling film and set aside
Whisk together the cheese, cream and sugar and add to the melted white chocolate
Combine 50 grams of raspberries with 2 tbsp of jam in a separate bowl
Spoon half of the cheese mixture into the loaf tin
Add the raspberry mixture down the center of the tin
Add the rest of the cheese mixture
Place the biscuits on top of everything to give it a nice sturdy base
Cover and chill in the refrigerator for 6 hours or overnight preferably.
To serve
Turn over the tin on a plate carefully and slowly remove the cling film
