  1. Heat oil in large skillet and add zucchini, onion, tomato and garlic.
  2. Cover and cook until desired tenderness, about 10 minutes. Drain.
  3. Stir in tomato sauce and seasonings.
  4. Grease a 13×9″ baking dish and place in it a layer of the zucchini mixture, then top with shredded cheese.
  5. Continue layers until pan is full, ending with the remaining cheese.
  6. Bake uncovered, in a 350°F oven, for 25 minutes.
  7. Top with shredded cheese, if desired.
