Green Pea Soup Recipe
An indulgent green pea soup.
Ingredients

unsalted butter

scallions
coarsely chopped

small Potato
diced

clove
garlic
crushed

frozen peas
3 1/4
cups
chicken stock
salt and pepper
ounces
To garnish: 6frozen peas

ounces
heavy cream
Instructions
Melt the butter and sauté the scallions, potato and garlic.
Cook over low heat for ten minutes, stirring occasionally.
Add the peas, stock and salt and pepper to taste.
Allow to cool and purée.
Pas through a sieve and garnish with the peas and cream.
