Ingredients
For the Pudding
- 2 Cups almond milk
- 1/2 Cup cherries
- 1/2 Tsp cardamom powder
- 1 Tsp sugar
- 1 Tsp vanilla extract
- 1/2 Cup Chia Seeds
For the Cherry Topping
- 1/4 Cup cashews (Soaked in Water Overnight)
- 1/4 Cup cherries
- 2 Tbsp cold water
- 1/4 Tsp vanilla extract
- 1/8 Tsp sugar

Instructions
- Blend together the almond milk, cherries, cardamom powder, sugar and vanilla extract in a blender until smooth. Pour this mixture over the Chia seeds, and stir. Let it set for a few hours.
- Move on to making the cherry topping. Make a paste of the cherries in a blender or food processor. Then drain the cashews, and add them into the blender as well, with the cold water, vanilla extract and sugar.
- Once your Chia Seed Pudding is set, you can top it off with the cherry cream and enjoy it served cold.
