Ingredients
- 1 Tablespoon unsalted butter
- 1/2 teaspoon oregano
- 3/4 cup chopped onion
- 7 cups chicken broth
- 1/2 teaspoon Salt
- 1 teaspoon fresh thyme
- 4 cups uncooked wide egg noodles
- 1/4 cup all purpose flour
- 1 cup fat free half-and-half or whole milk
- 1 cup sliced celery
- 2 garlic cloves minced
- 1 cup sliced carrots
- 1/2 teaspoon Fresh ground pepper
- 1 medium potato peeled and diced
- 2 cups shredded roasted chicken

Instructions
- Heat the butter in a large pot over medium heat.
- Add garlic, celery, onions and garlic and sauté for a good 5 minutes.
- Now add pepper, salt, oregano and thyme and sauté well.
- To the pot, add chicken broth and potatoes. Bring it to a boil, cover the pot and let it simmer in medium heat for about 25 minutes.
- At this point, add the noodles, half-and-half and the chicken. Cook for another 7-8 minutes. Taste the soup for seasoning.
- Serve warm.
