Gilmore Girls Sookie’s Ratatouille Recipe
Made with utter guilt and another man’s vegetables, the ratatouille made by Sookie at the Dragonfly Inn was loved by her entire kitchen staff. So much so that calorie-conscious Michel too couldn’t help but nibble at it and give it high praises. Here’s a ratatouille recipe inspired by Sookie, sans all the guilt.

Ingredients
- 6 ounces tomato paste
- 1/2 chopped onion
- 1/4 cup minced garlic
- 1 tbsp olive oil
- 3/4 cup Water
- Salt
- pepper
- 1 thinly sliced eggplant
- 1 thinly sliced zucchini
- 1 thinly sliced yellow squash
- 1 thinly sliced red bell pepper
- 1 thinly sliced yellow bell pepper
- 3 tbsp olive oil
- 1 tsp basil leaves
- 1/2 tsp thyme leaves
- 3 tbsp mascarpone

Instructions
- Put the oven on preheat at 190°C.
- Spread a layer of the tomato paste on the baking dish.
- Now sprinkle onion and garlic on top of this.
- In a bowl, combine olive oil and water.
- Put the vegetables altering each one to show the variety of colours.
- Drizzle the olive oil and water mixture .
- Season with salt and black pepper finally topping with basil and thyme leaves.
- Cover the vegetables with parchment paper and bake for 45 minutes.
- Top with mascarpone and serve.
