Mooli Paratha Recipe
Flatbreads are a widely consumed staple in India. The category includes a number of flatbread varieties like roti (chapati), poori, naan, sheermal, paratha, and more. Parathas can be further divided into categories one of which is stuffed parathas. Stuffed parathas consist of a ticker flatbread with a filling of mashed vegetables, lentils, and pulses. A popular and commonly loved flatbread is mooli paratha or radish stuffed paratha.
The mooli paratha packs some delicious flavours. The bread consists of shredded radish mixed with a bunch of spices like carom, cumin, and garam masala, filled inside dough kneaded with water, oil, and salt. The final result is a crusty paratha loaded with finger licking good flavours, best enjoyed with pickle or curd, especially when the mercury has dropped a few degrees. - 2 cups whole wheat flour
- 1 cup ghee
- 1 tsp Salt
- water as required
- 2 cups grated radish
- 2 tbsp chopped coriander leaves
- 1 tsp red chili powder
- 1 tsp carom seeds
- 1 tsp Cumin seeds
- 1 tsp Garam masala powder
- 1 tsp finely chopped ginger
- 1 tsp finely chopped green chilies
- 1 tbsp Salt

- Knead the flour, water, ghee, and salt into a smooth dough. Divide the dough into small pieces and shape into round balls and flatten.
- In another bowl mix all the ingredients for the stuffing.
- Flatten out the dough between your palms and place some filling in the center.
- Wet the edges and bring together to enclose the filling. Pinch to seal.
- Roll out this stuffed ball to smoothen, dip in dry flour and roll out as thinly as you can without tearing.
- Heat a pan, lower the heat and place one parantha over it. When the edges start lifting and browning, take some ghee and make a trail along the outer edge of the parantha and some on the surface. Flip and brown on both sides. Make the rest of the parathas in the same manner.
- Serve hot.
