Mushroom Mashed Potato Recipe
A side of mashed goes well with just about any dish. Not only is the creamy side a great balance to a meal, but can also substitute as the source of necessary carbohydrates instead of breads. Mashed potatoes can be customized in a number of ways (Monica from FRIENDS would totally agree), and one such tweak is the mushroom mashed potato.
This variation features the creamy goodness of classic mashed potatoes only with the added flavours of sautéed mushrooms and some garlic. So get mashing and whip up this delicious mushroom mashed potato!

Ingredients
- 8 tbso butter divided
- 1 cup sliced fresh mushroom
- 1/2 cup onion diced
- 2 tbsp fresh chives chopped
- 1 Garlic Clove chopped
- 1 cup white wine
- 6 cups diced potatoes
- 1/2 cup sour cream
- Salt and freshly ground black pepper
- Small amount warmed whole milk

Instructions
- In a saucepan, melt 1/2 stick (4 tablespoons) butter and sauté mushrooms, onion, chives and garlic.
- Add wine and simmer for about 15 minutes.
- In a pot, boil the potatoes until done, and then drain.
- Mash potatoes and add remaining 1/2 stick butter, salt, pepper, sour cream, and warm milk to desired consistency.
- Combine all ingredients and whip until thick and creamy. Serve.
