Pasta Pesto Rosso Recipe

Ingredients
- 50 g sun-dried tomatoes. sliced into thin short strips
- 1 yellow bell pepper diced
- 1 small zucchini sliced
- 100 g pasta cooked and drained
- 200 g frozen broccoli florets
- 2 -3 garlic cloves
- 8 teaspoons olive oil
- 2 tablespoons tomato paste
- 100 ml Water
- 100 g cherry tomatoes halved
- 2 teaspoons fresh rosemary chopped
- Parmesan cheese for sprinkling
- salt and pepper

Instructions
- Heat oil in a saucepan and saute crushed garlic.Wait for the garlic to smell fragnant and add the sun-dried tomatoes, broccoli and rosemary- fry until fragrant.
- Add water, tomato paste and salt and pepper. Simmer for 5-8 minutes.
- Then add bell pepper and zucchini. Cook for another 2 minutes.
- Toss the pasta in. Remove from heat once combined.
- Sprinkle with freshly grated Parmesan cheese and add cherry tomatoes to serve.
