Ingredients
- 7 ounces firm sheep’s milk cheese such as Berkswell grated
- 7 ounces wafer-thin slices of the same cheese for glamour
- 4 pounds ½young peas in their pods podded at the last minute
- 1 Spring onion very finely sliced
- a bundle of pea shoots which are pretty easy to track down now
- Dressing
- a splash of sherry vinegar
- 2 healthy splashes of extra-virgin olive oil
- sea salt and black pepper

Instructions
- With the exception of your glamour slices of cheese, mix all the ingredients in a salad bowl. Add glamour and serve.
