Potato Wafer Omelette Recipe

- 12 Large Eggs
- 3 tbsp heavy cream
- 1/2 tsp white pepper
- 1 tsp Parsley finely chopped
- 1 tbsp chives minced
- 6 cups plain potato chips
- 2 tbsp unsalted butter

Instructions
- Preheat an oven to 375F.
- While the eggs and stir in the cream, white pepper, parsley and chives.
- Gently stir in the potato chips, being careful not to crush them too much.
- Allow this mixture to stand for ten minutes.
- Heat the butter and evenly fry the eggs, reducing the heat to low.
- Cook for 15 minutes until the eggs are golden on the bottom.
- Place the skillet in the oven and bake until the eggs are done, for about three minutes.
- Take the skillet out of the oven and flip it over a plate.
- Season with salt and pepper and enjoy!
