Bengali Rasgulla Recipe
Instructions
For the cheese balls
- Boil the milk.
- Turn off the heat and wait for 1 minute
- Slowly add the curd until the solids separate
- Using a cloth, gather the solids from the liquid mixture
- Drop the cloth with the solids in cold water to stop the curdling
- Store it until excess water releases from the cloth
Kneading the cheese balls
- Remove the solids from the cloth and start kneading slowly using the palm of your hand
- Shape them into small balls
For the sugar syrup
- Add the sugar to 2 cups of water and let it heat up
- Once it starts boiling, add 1 tbsp of milk to the sugar syrup.
- Remove any excess particles from the syrup
- Boil the syrup until you get a 2 string consistency
For cooking the cheese balls
- Once the syrup comes to a boil, drop in the cheese balls
- Cook the cheese balls in the sugar syrup for approximately 5 minutes on high flame and 15 minutes on low flame
- Garnish it with some roasted pistachio and serve it hot or cold!
Recipe Notes
While cooking the cheese balls, make sure not to include too many in one batch.
