Veg Cheese Toast Sandwich Recipe
Unlike regular sandwiches that consist of thin slices of vegetables smeared with chutney and butter, the veg cheese toast sandwich uses finely chopped veggies. Also, instead of applying the chutneys and ketchup separately, a homogenous mix of all the ingredients (including the vegetables) is made.
With a generous amount of cheese added to all this the final grilled or toasted result is nothing short of heaven. You can use shredded, slices or even cream cheese for the sandwich. So let’s create some cheesy magic, shall we?

Ingredients
For veggie mixture
- 1 cup medium or ⅔boiled potato peeled and mashed
- cup ¼onion finely chopped
- cup ¼tomato finely chopped
- cup ¼cucumber finely chopped
- cup ¼capsicum finely chopped
- 1 green chili chopped finely
- 2 tbsp Cilantro or coriander leaves finely chopped
- salt to taste
- 1 tsp ½Sandwich masala
- 2 tbsp Green Coriander chutney
- 2 tbsp ketchup
Other ingredients
Substitute for sandwich masala
- tsp ¼garam masala
- 1 tsp chaat masala
- tsp ¼black salt
- tsp ¼amchur powder

Instructions
- Take mashed potatoes in a bowl and add all the chopped veggies to it. Mix well.
- Add salt and sandwich masala.
- Also add green chutney and ketchup. Stir well.
- Take bread slices.
- Apply butter on it.
- Take cheese slice (or any other form of cheese) and put on the bread.
- Spread about 2-3 tablespoons of veggie mixture on the one bread slice.
- Close the sandwich with another bread slice and toast/grill the sandwich in and electric toaster.
- Toast till it gets crispy and golden brown.
- Serve with chutney or ketchup.
