Instructions
  1. Boil the rice in the water. Once it boils, reduce the heat to medium and simmer until the rice is tender and the water is completely absorbed.
  2. Once cooked, stir the rice vinegar into the rice using a wooden spoon.
  3. Add the sugar and salt and allow the mixture to cool
  4. Mix the crab meat and mayonnaise in a separate bowl.
  5. Spread a sheet of nori on a flat surface.
  6. Spread a layer of rice on the nori.
  7. Put the nori, rice side down on a sushi rolling mat.
  8. Then, place avocado slices over the nori sheet, in one layer.
  9. Add two to three tablespoons of the crab and mayonnaise mixture over the avocado.
  10. Spoon a little tobiko on the avocado crab mixture and place to cucumber strips over that.
  11. Using the mat, roll the California roll into a log.
  12. Remove the rolling mat and top the roll with more tobiko.
  13. Cut the roll into six pieces using a wet knife.
  14. Repeat with the other sheets of nori.
  15. Serve with wasabi paste, ginger and soy sauce.
