Ingredients
- 2 potatoes Diced
- 1 capsicum Diced
- 1 onion Chopped
- 1/2 teaspoon Ginger paste
- 1/2 tablespoon coriander powder
- 1 teaspoon chilli powder
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Garam masala powder
- Salt to taste

Instructions
- Heat oil in a pan.
- Add the onions and saute till they turn light brown.
- Add the ginger paste and stir for a few seconds.
- Add the coriander powder, chilli powder and turmeric powder and stir for 30 seconds.
- Add the diced potatoes, capsicum and salt and mix well.
- Cover and cook on low heat till the vegetables are cooked through.
- Sprinkle the garam masala powder and mix well.
- Switch off heat.
- Garnish and serve hot with Rice or Roti.
