Broad Bean Trotter Salad

Ingredients
- 4 pounds ½young broad beans podded at the last minute
- 10 ounces ½Trotter Gear
- 4 slices of crunchy toast healthily rubbed with raw garlic, then broken into quarter-walnut-sized nuggets
- a bundle of broad bean shoots and a handful of finely chopped curly parsley (if unavailable wild rocket or watercress can substitute)
- Dressing
- 2 healthy splashes of extra-virgin olive oil
- a healthy splash of red wine vinegar
- 1 tsp dijon mustard
- sea salt and black pepper

Instructions
- Pod the broad beans into a bowl. Heat your Trotter Gear. With a holey spoon, scoop the wobbly trotter into the beans. Add the toast, broad bean shoots and chopped parsley or leaves.
- Mix together the dressing ingredients. Dress the salad, toss thoroughly and serve.
