Jackfruit Curry

Instructions
  1. Before you begin, soak cowpeas for 15 minutes and pressure cook for 15 minutes.
  2. In a pot, add the jackfruit, turmeric and chilly powder along with salt to taste.
  3. Add a cup of water to the pot and cook for 8 minutes or until the jackfruit has been fully cooked.
  4. Then add the drained cowpeas and cook for about 5 minutes.
  5. While that's cooking, add coconut and cumin seeds in a grinder and grind to a smooth paste with a tablespoon of water.
  6. Add the paste to the cooked jackfruit and simmer for about 3 to 4 minutes.
  7. Meanwhile, add coconut in a frying pan with oil and roast until browned.
  8. Add the tempering ingredients which are mustard, dal, chillies and curry leaves.
  9. After frying for a minute, add the tempering to the jackfruit gravy and mix well.
  10. Remove from heat and serve.
