Ingredients
- 125 gms crabmeat
- 2 medium eggs lightly beaten
- 2 tsp vegetable oil
- 1 tblsp olive oil
- 1 clove garlic finely chopped
- 500 gms Rice cooked
- 1/3 cup peas
- 2 tblsp sweet corn kernels , boiled (optional)
- 1 tblsp Spring onions finely chopped (optional)
- 2 tblsp onions fried
- 1 wedges lime

Instructions
- Heat the vegetable oil in a pan over medium flame.
- Pour the eggs and swirl well.
- Cook until the eggs are cooked evenly and remove from flame.
- Allow it to cool and chop them into small pieces.
- Heat olive oil in a pan over medium flame.
- Add the garlic and fry for 10 seconds.
- Add the rice and stir well.
- Add the peas, crabmeat and 1 tblsp onions.
- Mix well and cook for a minute.
- Transfer to a serving bowl.
- Garnish with the fried shallots and lime wedges.
- Serve with the chopped omelettes on top or by the side.
