Gibson Cocktail
Relative of the martini, the Gibson uses a pickled cocktail onion in place of the typical briny olive to add an umami undertone to the classic cocktail. Although we can’t say for certain who invented it according to Liquor the Gibson cocktail is believed to have been created by San Francisco businessman Walter D.K. Gibson in the late 1800s, who thought that eating onions prevented colds, hence the tangy addition.

Ingredients
- 2 1/2` ounces Gin
- 1/2 ounce dry vermouth
- ice
- 1 pickled onion for garnish

Instructions
- Add both ingredients to a mixing glass and fill with ice. Stir, and strain into a chilled cocktail glass. Garnish with pickled onion.
