And as Chef Deepak Yadav of Courtyard by Marriott Downtown Gurugram told us, it is not just about being around food and cooking and baking. But then there are the immensely talented lot like Yadav who’ve aced the art of professional baking, rolling out one after the other decadent desserts. Like this gooey chocolate cheese brownie, which also happens to be Chef Yadav’s favourite owing to the dessert’s delicious chocolate and cheese combination.
Chef Yadav was generous enough to let us in on his gooey chocolate cheese brownie recipe. Follow these steps below to whip up a gooey sugary storm tonight!

Ingredients
Chocolate Brownie Batter
- 1 cup unsalted butter
- 2 1/4 cups sugar
- 1 1/4 cups cocoa powder
- 1 tsp Salt
- 1 tsp baking powder
- 1 tsp espresso powder
- 1 tbsp vanilla extract
- 4 Large Eggs
- 1 cup flour
- 2 cups Chocolate Chips
Cream Cheese Batter
- 400 gram cream cheese
- 3/4 cup sugar
- 1/2 cup flour
- 2 tsp vanilla extract
- 1/4 cup heavy cream
- 2 Large Eggs

Instructions
- Preheat the oven to 350°F.
To make the brownie batter
- In a large saucepan, melt the butter, and then stir in the sugar, cooking until the mixture is smooth and shiny. Remove from the heat and stir in the cocoa, salt, baking powder, espresso powder, and vanilla. Whisk in the eggs, then the flour, stirring until smooth.
To make the cream cheese batter
- Beat the cream cheese until no lumps remain. Mix in the sugar and flour, then the vanilla, cream, and eggs.
To make the brownies
- Fold the chocolate chips into the brownie batter.
- Spoon half the brownie batter into the prepared pan, then top with the cream cheese batter. Dollop the remaining brownie batter onto the cream cheese, swirling the two together.
- Bake the brownies for 35 to 45 minutes, until a tester inserted into the center comes out clean, and the edges are set.
- Remove from the oven, and loosen the edges with a table knife. Cool completely before cutting. Cut the brownie into 2" squares and serve.
