Granny Smith Apples and Avacado Salad Recipe

Ingredients
- 2 Granny Smith apples cored and cut into 1/2-inch pieces
- 2 Ripe Hass avacados peeled, pitted and cut into 1/2-inch chunks
- 2 strawberries thinly sliced
- salt to taste
- Freshly ground black pepper
- Juice of 1 lemon
- teaspoon cayenne pepper
- 4 tablespoons extra virgin olive oil
- 2 tablespoons finely chopped fresh cilantro
- 1 medium firm English cucumber
- Sprigs of dill

Instructions
- Mix apples, avacados, strawberries, salt, lemon juice, black pepper and keep it in a cool place.
- Whisk together oil and cilantro until well combined.
- Cut the cucumber vertically into thin slices, about 1/4-inch. Combine the 2 ends and form into a cylinder by securing it with a toothpick.
- Please it on a plate and fill it up with 1/4 of the mixed salad.
- Drizzle with the cilantro oil on sides and garnish it with a sprig of dill.
