Key Lime Pie Ice Cream Recipe

Ingredients
- 1/2 cup granular sugar
- 2 tbsp cornstarch
- 1/8 tsp Salt
- 2 cups Milk
- 1 cup half and half half milk and half cream
- 1 egg yolk
- 1 tsp key lime zest
- 1/3 cup key lime juice
- 1/2 cup crushed graham crackers
- 1 cup hot cream

Instructions
- Whisk the cornstarch, sugar and salt in a saucepan using a handheld whisk.
- Pour in the milk gradually and whisk it in.
- Pour in the half and half gradually and whisk it in.
- Cook over a medium flame for 8 - 10 minutes until the mixture thickens. Stir constantly.
- Whisk the egg yolk and pour in the hot cream gradually while whisking.
- Pour this mixture into the sugar, salt, cornstarch, milk and half and half mixture and whisk.
- Strain the mixture and discard and solids.
- Refrigerate the mixture for 8 - 24 hours.
- Remove the mixture from the fridge and freeze it in an ice cream maker according to the manufacturer's instructions.
- Half way through the freezing process stir in the key lime zest, key lime juice and graham crackers.
- After freezing is complete allow the ice cream to stand at room temperature for five minutes.
- Serve!
