Moroccan Lentil Tagine Recipe

Ingredients
- 2 pounds lentils 910 g
- 1/2 cup olive oil 118 ml
- 3 quarts chopped onions 2.8 L
- 10 cloves garlic
- 1 gal multicolored peppers 3.8 L
- 2 Tbsp. basil 30 ml
- 1 Tbsp. cumin 15 ml
- 1/2 tsp. thyme 2.5 ml
- salt and pepper to taste
- 1-1/2 qt diced tomatoes w/juice 1.4 L
- 1 cup red wine 236 ml
- 2 cups vegetable stock 473 ml

Instructions
- Sauté Onions , garlic, peppers herbs in oil until tender.
- Deglaze with wine.
- Add the lentils, tomatoes and stocks and bring to a simmer.
- Continue simmering until the lentils are tender.
- Adjust the seasoning as needed with salt and pepper.
