Ingredients
For Upma
- 1 cup Oats dry roast for 5 minutes and cool
- 1 carrot cubed
- 5-6 French Beans string and chop into pieces
- A fistful Green peas
- 1 onion finely chopped
- 2 Green chilies slit
- 1 tsp Ginger grated
- 1/2 tsp Turmeric powder
- salt to taste
- 1 cup Water
- 2 tsps ghee
- 2 tsps Oil
- 1 tbsp finely chopped Coriander leaves
For the spices
- 1/2 tsp Mustard seeds
- 2 Cloves
- piece SmallCinnamon Stick
- 1 Star Anise
- 1 Cardamom
- 1 Bay Leaf
- 4-5 Cashew nuts
- 1 sprig Curry leaves

Instructions
- Heat oil and ghee in a heavy bottomed vessel.
- Add mustard seeds and allow to splutter. Add whole spices, cashew nuts and curry leaves and saute for a minute on low to medium flame.
- Add the onions, ginger and green chilies and saute for 4 minutes.
- Add carrots and beans and saute on medium flame for 4 minutes.
- Add turmeric powder and salt and mix.
- Place lid and cook on low flame for 6-7 minutes.
- Add a cup of water and bring to a boil. Reduce flame, place lid and cook for 6-7 minutes or till the water is half absorbed.
- Add the dry roasted oats and mix. Cover with lid for 3 minutes. Turn off heat and mix well.
- Remove onto a serving bowl and garnish with fresh coriander leaves.
- Serve warm with pickle or chutney of your choice.
Recipe Notes
Vegans can leave out the ghee.
