Palak Mushroom Recipe

Ingredients
- 1 tbsp Oil
- tsp ½cumin seeds
- 3 cups button mushrooms chopped
- salt to taste
- tsp ½Coriander powder
- tsp ½red chili powder
- tsp ½garam masala powder
- 1 tsp kasuri methi
For the gravy
- 1 tbsp Oil
- cup ½onion chopped
- 2 cups packedspinach
- inch ½ginger chopped
- 2 cloves garlic chopped
- 1 green chili chopped
For cashew paste
- 10 cashews
- 2 tbsp warm water

Instructions
- Soak the cashews in the water for ten minutes and grind into a paste.
- Heat one tablespoon of oil and sauté the onion, ginger, garlic and green chili for a minute.
- Add the tomatoes and cook until soft.
- Add the spinach and cook until the leaves wilt.
- Allow the mixture to cook and grind into a puree.
- Heat up another tablespoon of oil and fry the cumin seeds.
- Fry the mushrooms and salt for two minutes.
- Stir in the powders.
- Then, add the spinach pure and add a little water to make a gravy consistency.
- Stir in the cashew nut puree.
- Finally stir in the garam masala and kasoori methi.
- Your gravy is ready!
