Prawns Pulao Recipe
Pulao is a dish that is made by cooking rice in a spiced broth. In this recipe, prawns and spices are tossed together before being mixed with rice and cooked in a chicken broth. The combination of spices gives the recipe Goan flavours.
Serve this pulao as a main course for lunch or dinner with a side of vegetables.

Ingredients
- 200 grams Prawns
- 3 tbsp ghee
- 250 grams Rice
- 1/2 cup Mint leaves
- 1/2 cup coriander leaves
- 4 Green chilies
- 1 tomato
- 2 onions julienned
- 1/2 cup Cashew nuts
- 3 green cardamoms
- 8 peppercorns
- 3 cinnamon sticks
- 5 Cloves
- 4 bay leaves
- 1 tbsp ginger garlic paste
- 1 - 2 cups chicken stock

Instructions
- Sauté the whole spices in the oil over a low flame for 2-3 minutes.
- Add the cashew nuts and sauté for a further 2 minutes.
- Stir in the onions and green chilies and sauté until the onions brown.
- Add the prawns and the ginger garlic paste.
- Mix well and add the tomatoes.
- Toss the tomatoes for a minute and add the coriander and half the mint leaves.
- Stir in the rice and add the chicken stock.
- Add a little salt and cover the pan.
- Allow the rice to cook for twenty or so minutes.
- Check that the prawns and the rice are cooked through and then take the pulao off the stove.
- Garnish with mint and coriander leaves.
