Roasted Sweet Potato Salad Recipe

Ingredients
- 500 grams sweet potato
- 50 grams Capsicum chopped
- 50 grams spinach
- 30 grams Mint leaves chopped
- 30 grams coriander leaves (chopped
- 2 grams chopped garlic
- 2 tbsp olive oil
- 2 Red dry Chili flakes
- tbsp IHoney
- salt to taste

Instructions
- Wash and slice the sweet potatoes.
- Take a shallow pan.
- Set it on the stove and turn on the heat.
- Add the oil.
- Add the sliced sweet potatoes.
- Sprinkle salt, mint leaves and red chili flakes.
- Turn off the stove.
- Put a lid on the pan, the sweet potato will cook in its own steam.
- Cook for 20 minutes in the oven at 170 degrees C temperature, in the same pan, add water if required.
- Once the sweet potato is roasted, turn off the heat.
- Immediately add the, honey, capsicum and spinach.
- Close the lid. The heat will soften the capsicum and the spinach to a nice crunch.
- Garnish with coriander leaves and serve cold
