Spicy Pineapple Pizza Recipe
Say what you want to and judge us all you want, but a teeny tiny portion of our heart does beat for some piping hot Hawaiian pizza, a.k.a. pineapple pizza, a.k.a. a blend of spicy, fruity, and tropical ingredients like chicken and pineapple atop a cheesy pizza. Yes, I am okay with a little pineapple on my pizza so deal with it! And if you want to know why I love the combination so much, try the recipe below to bake some at home and find out!

Ingredients
- 1 large chicken breast
- 1/2 cup pineapple tamarind marinade or any other sweet and spicy marinade
- Whole wheat pizza dough
- 1/2 cup barbecue sauce
- 2 tbsp pineapple tamarind marindae
- 1/2 cup diced red pepper
- 2/3 cup diced pineapple
- 2 bacon slices cooked, chopped, and drained of excess fat
- 1.5 cup shredded mozzarella cheese

Instructions
- Dice chicken breast and place in a ziploc bag with the ½ cup marinade. Refrigerate for at least 2 hours and up to 24 hours.
- Preheat oven to 400 degrees F.
- Grease a 15" pizza pan or large baking sheet. Roll out pizza dough to fit pan, and place on the pan. Bake at 400 degrees F for 10 minutes.
- Meanwhile, cook chicken in a medium pan over medium-high heat for 6-8 minutes, until fully cooked (I always make sure by cutting open some of the biggest pieces)
- Combine barbecue sauce and 2 tablespoon marinade. Spread over dough.
- Sprinkle with cheese, pepper, pineapple, bacon, and chicken.
- Return to the oven and bake another 10 minutes. Broil for 1-2 minutes to brown the crust and the cheese if desired.
