Ingredients
- 4 cups vegetable broth
- 2 teaspoons extra virgin olive oil
- 2 ribs celery diced
- 1 teaspoon coriander
- 3 garlic cloves minced
- 2 teaspoon fresh thyme
- 4 cups baby spinach
- 1 1/4 can diced tomatoes and juices
- 1/4 teaspoon crushed red pepper flakes
- 2 carrots peeled and diced
- 1 small Onion diced
- 30 grams lentils
- 2 teaspoon cumin
- black pepper
- kosher salt

Instructions
- Heat olive oil in a large pot. Add onions, celery and carrots. Cook until the veggies soften. At this point, add cumin, garlic, coriander and red pepper flakes and mix well. Season.
- To the pot, add tomatoes, thyme vegetable broth and lentils. Bring to a boil and reduce the heat. Cover partially and let it simmer for a good 20 minutes.
- Add spinach and mix well. Cook for 2 minutes and season. Serve warm.
