Ingredients
- 12 beef tenderloin steaks center cut
- salt and pepper
- 1 1/2 cups beef broth
- 12 tbsp Worcestshire sauce
- 6 tsp dijon mustard
- 6 tsp tomato paste
- 6 tbsp butter
- 1 cup Shallots minced
- 1 cup muhsrooms chopped
- 1 cup heavy cream
- Freshly ground black pepper

Instructions
- Season the steaks with salt and pepper and allow to stand at room temperature for half an hour.
- Stir the broth, Worcestershire sauce, tomato paste and mustard sauce together.
- Working in batches, sear the steak in butter until it browns (approximately 1-4 minutes).
- Once the steaks are done, take out of the pan and sauté the shallots and mushrooms in the remaining butter.
- Add the broth and mix well.
- Stir in the heavy cream and cook for two minutes.
- Place the steak in a serving dish and serve the sauce on the side.
