Thai Fried Prawn & Pineapple Rice Recipe

Ingredients
- 300 grams cooked basmati rice
- 4 teaspoon light soy sauce
- 140 grams pineapple chopped into chunks
- 225 grams can bamboo shoots drained
- 2 teaspoon Sunflower Oil
- 1 lime juiced
- 3 teaspoon Thai green curry paste
- 2 Large Eggs beaten
- 1 bunch spring onions sliced
- 250 grams frozen prawns
- 1 green pepper chopped into small chunks
- 140 grams frozen peas
- leaves Handful coriander

Instructions
- In a wok, heat oil and fry the spring onions. Add pepper and the pineapple and stir for about 5 minutes. To the wok, add the green curry paste and light soy sauce. Mix well.
- At this point, add the rice and stir. Make a well in the wok and add the beaten eggs and scramble them.
- Add peas, drained bamboo shoots, prawns and stir well. Season again and cook until the prawns are tender. Add more spring onions, lime juice and garnish with coriander. Mix well and serve hot!
