Ingredients
- ½ pound Pork spareribs
- 1 can coconut cream
- 1 tablespoon Thai curry paste any flavor
- 1 cup Bell peppers, thin slivers
- 1 cup Kabocha squash sliced
- 1 small yellow onion, quartered
- 2 cloves garlic minced
- fish sauce as needed

Instructions
- Season the meat with salt and pepper and let it rest for 15min. Prepare garlic, onion, and peppers. For the squash, wash the outside if you keep it in
- Use a big pot for meat, top frothy part of coconut cream, vegetables and curry paste to brown. Pour in rest of cream and cover pot for 20min on medium
- Taste and see if a 1/2 tsp of fish sauce is needed. Serve with rice since it will be spicy, creamy and salty!
