Vegetarian Christmas Fruit Cake Recipe
This delicious Christmas Fruit cake recipe will help you usher in the festive season in the easiest way possible. And this is an egg-less cake recipe, so vegetarians don't need to feel left out from all the festivities. Made with rich dried fruits and nuts, it requires no pre-soaking of ingredients and can be baked in a jiffy!

Ingredients
- 1/2 Cup Dried Fruits (You can use figs, apricots, cranberries, raisins, dates, or cherries)
- 1/2 Cup brown sugar
- 1/2 Cup white sugar
- 1 Tsp baking powder
- 1/2 Tsp baking soda
- 1/2 Tsp cinnamon powder
- 1/2 Tsp nutmeg powder
- 1/2 Cup nuts (Mixture of any choice of nuts such as cashews, almonds, walnuts)
- 250 Grams MAIDA | ALL PURPOSE FLOUR
- 1/2 Cup Oil
- 2 Tsp Red Food Colour
- 2 Tsp vanilla essence
- 1/2 Cup yoghurt
- 1/2 Cup warm water

Instructions
- To start off, Whisk together the brown sugar, white sugar, and water.
- Add in the Oil and the yoghurt. Once these are well-combined, add the flour (which is mixed along with the baking powder, the baking soda, the cinnamon and nutmeg powder) and mix well.
- Keep dividing the batter as you mix it to avoid lumps. Now add in the Red food colour and vanilla essence.
- Finally, mix in the nuts and dried fruits.
- Pour the batter into a greased baking pan lined with baking paper and bake at 180*C for 45 minutes in a pre-heated oven.
