Roast Lamb Salad Recipe

Ingredients
- 1/2 kg boneless lamb
For marination
For the salad
- 1 shredded lettuce
- 1 sliced cucumber
- 1 sliced bell pepper
- 1 pear - halved cored and peeled
- 1 Tbsp shredded spring onions
- 1 avocado- peeled and sliced
For the dressing
- 100 ml yoghurt
- 2 Tbsp chopped mint
- 1 Tbsp - sweetened cooked apple puree
- 1 Tbsp honey
- salt and pepper
- Mint sprigs to garnish

Instructions
- In a tray, arrange the lamb well.
- Now cover each and every piece with garlic, lemon juice and add salt, pepper and mustard powder.
- Let it maronate for 3-4 hours.
- In a pan, add oil and keep on high flame.
- When the oil starts smoking, add it to the lamb evenly.
- Preheat your oven to 200 degrees.
- Place the lamb tray inside and allow it to cook until tender.
- Remove from the oven.
- In a bowl, add all the salad ingredients.
- Now add, the lamb and mix well.
- Now add the dressing over the salad and serve
