Sweet potatoes get there color from unique fat-soluble polyphenols called anthrocyanins, and are abundant in various antioxidants and fat soluble carotenoids such as beta carotene, a pro-vitamin A. Hence, always prefer homemade sweet potato fries over your McDonald Fries!
