Thanks To A Bill Gates Backed Startup, Your Avocados Will Stay Ripe Twice As Long

The avocado toast craze is sweeping the world, and as such, avocados are in high demand. We all know the drill, avocados are raw, we wait for them to ripen, but wait (literally an hour) too long and you’re left with borderline rotten, mushy avocado – a total waste of all our hard-earned millennial money.

However, thanks to Apeel Sciences, a California-based startup back by none other than the Bill & Melinda Gates Foundation, your avocados will now stay ripe for twice as long! Apeel is made of a plant-derived powder that is then mixed with water. The mixture is then used to coat avocados, or any produce of your choosing, creating a second skin for your fruits and vegetables.

The company’s website says that this coating will maintain moisture and reduce oxidation in produce, which will dramatically slow the rate at which it spoils. For avocados, this method is said to keep the fruit at peak ripeness for twice as long as normal. Apeel Sciences also says that the coating is colorless, odorless, and tasteless on produce, so you don’t have to worry about any side-effects that alter the taste of your avocado toast!
