‘Waitress’ Spanish Dancer Pie Recipe
Among many of her oddly-named pies was the slightly less odd savory preparation called the Spanish Dancer Pie, which might have been mentioned in a passing conversation.
The Spanish Dancer Pie wasn’t really discussed in detail and most of it was left to our imagination. And what an excellent thing that is! So all we know that the crust is potato and the overall feel is, well, Spanish so there ought to be a fair amount of Pepper Jack, chorizo, salsa and jalapeno. Let’s get baking then, shall we?

Ingredients
For the Crust
- 3 Medium raw potatoes grated
- 1 egg beaten with a splash of milk
- salt and pepper to taste
For the Filling
- 1 package pork chorizo browned
- 3 eggs beaten with a splash of milk
- ½ can of corn
- ½ onion peeled and chopped
- 1/3 cup of chopped cilantro
- 2 jalapenos
- 2-3 cloves of garlic
- cup ¾shredded Pepper Jack cheese
- 1 tsp Spanish paprika
- Salsa for topping

Instructions
- Preheat oven to 350 degrees.
- Toss the grated potato with beaten egg, salt and pepper.
- Brown chorizo sausage with garlic.
- Chop jalapenos, and whisk remaining eggs with salt, pepper, and milk.
- Press potatoes into oiled pie tin.
- Layer fillings as you choose, topping off with cheese.
- Bake for about 35 minutes, or until a fork inserted comes out clean.
- Serve.
Recipe Notes
You can add more veggies like zucchini, capsicum, spinach, etcetera, if you like.
